Dextransucrases catalyse the transglycosylation of α-d-glucosyl residues in sucrose to a glucan chain via α-1,6-glycosidic linkages, resulting in the generation of dextrans and the release of fructose. The food enzyme under assessment is intended to be used in the processing of sugars for the production of oligo-and polysaccharides in situ.
