serine endopeptidase

Serine endopeptidases catalyse the hydrolysis of peptide bonds of proteins with preference for large uncharged residues, releasing peptides and amino acids. This enzyme has broad substrate specificity. The food enzyme under assessment is intended to be used in the processing of cereals and other grains for the production of distilled alcohol, as defined in the EFSA guidance.
